Carrot thoran, an easy to make, savory coconut and carrot stir fry side dish

Ingredients: 

Carrots (grated): 3 
Coconut (scraped): 4 tbsp
Green Chilies (chopped): 2
Mustard Seeds: 1 tsp
White Split Urad dal: ½ tsp
Curry Leaves: 4-5
Coconut Oil: 1 tbsp
Medium Red/ Yellow Onion (finely chopped): 1 
Salt to taste

Instructions: 

1) Heat oil in a saucepan. Add mustard seeds and wait till it splutters

2) Add ural dal and fry for 10-15 seconds. It will change color from white to light brown

3) Add finely chopped onions and fry till golden brown

4) Add curry leaves and green chili. Fry for a minute

5) Add grated carrot, scraped coconut and salt. Stir well

6) Cover and cook for 3-4 minutes stirring occasionally

7) Remove from heat once the carrots are cooked

Common Mistakes: 

1) Do not burn the urad dal

2) Do not add turmeric. Let the natural color of the carrot remain unaffected

 

Tips: 

Add chopped cabbage or french beans to the dish. Remember to steam the chopped french beans in minimum water for 5 minutes before adding to the dish.

Alternative Ingredients: 

Substitute coconut oil with vegetable oil

Bonus: 

Serve hot as a side dish
