Ingredients: 

Whole eggs: 4 
Large Yellow or Red Onion (finely chopped): 1
Green chilies: 2
Grated coconut: 4 tbsp
Curry leaves (chopped): 2 tbsp
Coconut oil: 3 tbsp
Salt to taste

Instructions: 

1) Crack open the eggs in a bowl and whip well

2) Add chopped onion, grated coconut, green chilies and curry leaves. Blend well

3) Add salt to taste

4) Heat pan to medium heat

5) Add oil and when hot, pour the egg mixture

6) Drizzle little oil on the sides, cover and cook for 2 min

7) Flip over and cook on both the sides till brown and cooked

Common Mistakes: 

Do not overcook the eggs. Keep it crisp on the outside and soft within.

Tips: 

1) Whipping initially lets the air in the egg, making it soft and fluffy

2) Add 2 tbsp of water to the mixture while blending if extra fluffiness is required or 2tbsp of milk for added richness

3) Covering and cooking make the eggs fluffy

 

Alternative Ingredients: 

1) Substitute coconut oil with butter

2) Substitute green chili with red chili flakes

 

Bonus: 

Serve hot with toasted bread, tomato ketchup and coffee for breakfast or dinner
