Paneer Bhurji

A healthy breakfast side dish made with fresh cottage cheese

Ingredients: 

Fresh cottage cheese/ Paneer: 150 gm
Large Yellow or Red Onion (finely chopped): 1
Green chilies (chopped): 2
Deseeded Tomato (sliced): 1
Cumin Seeds: 1 tsp
Clarified butter: 1 tbsp
Turmeric powder: ¼ tsp
Squeezed lemon juice: 1 tsp
Cilantro leaves for garnish
Salt to taste

Instructions: 

1) Crumble cottage cheese with fingers into small bits and keep aside 

2) Heat clarified butter in a sauce pan. Add cumin seeds and let it sizzle for 30 sec. Add chopped onion and stir. Fry till golden brown and transclucent

3) Add chopped green chilies. Fry for a minute

4) Add deseeded sliced tomato, turmeric and salt and stir for 2 minutes. Tomatoes will turn pulpy

5) Add crumbled paneer/cottage cheese. Sprinkle 1 tbsp of water and stir for 2-3 minutes

6) Sprinkle lemon juice. Stir for a minute and remove from heat. Garnish with coriander leaves and remove to a serving plate

 

Common Mistakes: 

Do not dry out the cottage cheese /paneer or it becomes rough in texture. Sprinkle water. Also serve it hot to retain the moisture.

Tips: 

The cheese/panner starts to release its own oil once cooked which is an indicator to remove from heat (about 2-3 min). 

Alternative Ingredients: 

1) Substitute Clarified butter with olive or vegetable oil

2) Substitute green chili with red chili flakes

3) Cumin seeds can be substituted with mustard or can be avoided

4) Turmeric too can be avoided

 

Bonus: 

Serve hot with toasted bread and coffee/ tea for breakfast
